Banana Salsa

 


6 ripe but firm bananas, quartered, then cut into dice
1 jalapeño pepper, stem and seeds removed, then minced
1 Tablespoon olive oil
2 Tablespoons fresh lime juice
2 Tablespoons chopped fresh cilantro
1 Tablespoon chopped fresh mint
1 green bell pepper, cored, seeded, and diced
1 red bell pepper, cored, seeded, and diced
1 teaspoon salt
½ teaspoon freshly ground black pepper

Combine all ingredients and let sit for two to four hours before serving.

Makes 8 servings.
