Butternut Squash Fries

 


1 butternut squash (about 2 pounds)
½ teaspoon salt

Preheat oven to 425° F.

Peel squash, slice off the ends, and then cut it in half width-wise. Cut the round bottom piece in half lengthwise and scoop out the seeds.

Using a crinkle cutter or a knife, carefully cut squash into French-fry shapes. Sprinkle evenly with salt.

Spray a baking sheet, or a rack placed over a baking sheet with nonstick spray, and then spread the fries out flat on it.

Bake in the oven for 20 minutes, and then carefully flip fries. Continue to bake until tender on the inside and crispy on the outside, about 20 minutes longer.

Sprinkle with additional salt and serve with ketchup for dipping.

Makes 4 servings.
