Jamaican Jerked Chicken

 


¼ cup minced green onions
1 Tablespoon vegetable oil
1 Tablespoon hot pepper sauce
2 teaspoons ground allspice
1 teaspoon ground cinnamon
½ teaspoon salt
½ teaspoon nutmeg
2 large cloves garlic, minced
4 boneless skinless chicken breast cutlets (about 1 pound)
Non-stick cooking spray

In 13 x 9 x 2-inch baking dish combine first 8 ingredients. Add chicken, turning to coat with marinade. Cover; refrigerate 30 minutes or overnight.

Before igniting grill or broiler, spray rack or broiling pan with cooking spray.

Grill or broil, 4 to 5 inches from heat, 10 to 12 minutes or until desired doneness.

Makes 4 servings.
