Tofu Fettuccine Alfredo
2 packages (8 ounces each) tofu shirataki fettuccine noodles
2 wedges The Laughing Cow Light Creamy Swiss cheese
4 teaspoons grated Parmesan cheese
2 teaspoons light sour cream
Freshly ground black pepper
Rinse and drain shirataki noodles; pat dry. In a microwave-safe bowl, microwave for 1 minute. Dry as thoroughly as possible, using paper towels. Cut noodles up a bit, using kitchen shears or a knife.
Add cheese wedges, Parmesan, and sour cream, breaking up cheese wedges into pieces as you add them. Microwave for 1 minute. Add salt and pepper, and stir well.
Makes 2 servings.
