Tomato Salsa

 


6 medium red tomatoes, chopped
4 small yellow tomatoes, chopped
2 Tablespoon fresh lemon juice
2 small fresh jalapeño peppers, seeded and minced
1 small onion, minced
6 cloves garlic, minced
2 Tablespoons chopped fresh cilantro (optional)
1 teaspoon salt

In a large bowl, combine all the ingredients. Stir gently to mix. Cover and set aside at room temperature for up to 3 hours before serving.

Makes 16 ¼-cup servings.
