Cheesy Broccoli Soup


¼ cup chopped onion
1 Tablespoon butter
1½ cups milk
¾ pound Velveeta Pasteurized Process Cheese Spread, cubed
1 package (10 ounces) frozen chopped broccoli, cooked and drained
Dash freshly ground black pepper

In 2-quart saucepan, cook onions in butter until tender. Add remaining ingredients; stir over low heat until process cheese spread is melted and mixture is hot.

Top each serving with toasted slivered almonds, if desired.

Makes 4 servings.


Substitute frozen chopped spinach for broccoli.

Substitute frozen cauliflower for broccoli.

Substitute frozen asparagus spears for broccoli.


Microwave onions and butter in 2-quart casserole or bowl on High 30 seconds to 1 minute, or until onions are tender. Add remaining ingredients; mix well.

Microwave on High 6 to 8 minutes, or until thoroughly heated, stirring every 3 minutes. Continue as directed.
