Crumbletop Banana Muffins


1¼ cups all-purpose flour
1 Tablespoon baking powder
⅛ teaspoon salt
1 egg
½ cup milk
⅓ cup firmly packed brown sugar
3 Tablespoons canola oil
1½ cups POST Selects Banana Nut Crunch cereal
1 cup bananas, finely chopped

Crumbletop Topping
½ cup POST Selects Banana Nut Crunch cereal, lightly crushed
1 Tablespoon brown sugar
½ teaspoon ground cinnamon
1 teaspoon canola oil

Preheat oven to 400° F.

Mix flour, baking powder, and salt in large bowl. Beat egg in small bowl; stir in milk, brown sugar, and oil. Add to flour mixture; stir just until moistened (batter will be lumpy). Stir in cereal and banana. Spoon batter into greased or paper-lined muffin pan, filling each cup ⅔ full.

For the topping, mix cereal, brown sugar, and cinnamon. Drizzle with oil; stir until crumbly. Sprinkle evenly over muffins.

Bake 20 minutes or until lightly browmed.
