Garlic Mashed Cauliflower


1 medium head cauliflower, cut into florets
1 Tablespoons extra-virgin olive oil
2 cloves garlic, minced
¼ cup skim milk
1 teaspoon Kosher salt, divided
¼ teaspoon freshly ground black pepper

Add the cauliflower and ½ teaspoon of the salt to a boiling pot of water. Cook until cooked through and very tender, about 10 minutes. Drain well.

Meanwhile, in a small skillet, heat olive oil over medium-low heat, add garlic, and saute for about 30 seconds. Remove from the heat.

Put all ingredients into a food processor, and puree until smooth.

Makes 4 servings.
