Orange Delight Cookies


¾ cup vegetable shortening
1½ cups brown sugar
2 large eggs
1 teaspoon vanilla extract
1½ teaspoons grated orange zest
½ cup buttermilk
1 teaspoon baking soda
3 cups all-purpose flour
1 teaspoon baking powder
¼ teaspoon salt
¾ cup chopped nuts (your choice)

1½ teaspoons grated orange zest
⅓ cup orange juice
1 cup powdered sugar

Preheat oven to 350° F.

In a medium bowl, cream the shortening and brown sugar together; add the eggs. Stir in vanilla, orange zest, and buttermilk. Add the dry ingredients, followed by the nuts. Drop by teaspoonfuls, two inches apart, onto greased cookie sheets. Bake for about 10 to 12 minutes until light brown.

In a small bowl, mix all glaze ingredients together. Pour 1 teaspoon of glaze over each cookie while still warm.

Makes 36 cookies
