Pesto Grilled Cheese


2 slices white bread
1 Tablespoon pesto
1 slice provolone cheese
1 slice mozzarella cheese
1 Tablespoons butter

Spread pesto on 1 slice white bread. Top with 1 slice each provolone and mozzarella. Top with other slice of bread.

Heat ½ Tablespoon salted butter in a cast-iron or nonstick skillet over medium-low heat.

Press the sandwich slightly and place it in the skillet. Cook until golden on the bottom, 3 to 5 minutes.

Flip, adding remaining ½ Tablespoon butter to the pan, and cook until the other side is golden and the cheese melts, 3 to 5 more minutes.

Makes 1 serving.
