Pork and Sauerkraut


1 pork tenderloin (about 1¼ pounds)
½ teaspoon salt
½ teaspoon freshly ground black pepper
1 large onion, sliced
3 Granny Smith apples, chopped
1 large can (28 ounces) sauerkraut, rinsed and drained
4 medium white, Yukon Gold, or sweet potatoes, peeled and sliced (Mary prefers the sweet potatoes)

Season pork; set aside. Place potatoes in crockpot. Combine onion, apple, and sauerkraut and place on top of potatoes. Place pork on top. Cover and cook on low 8 hours or until potatoes are tender.

Makes 4 servings.
