Quick and Easy Minestrone
2 cans (14 ounces each) fat-free vegetable broth
2 cans (14.5 ounces each) diced tomatoes, drained
1 can (15 ounces) cannellini (white kidney) beans, drained and rinsed
1 package (10 ounces) frozen spinach, mostly thawed
1 cup frozen cut green beans
1 cup frozen peas and carrots
1 cup uncooked rotini or penne pasta
1 Tablespoon dried minced onion
2 teaspoons chopped garlic
1 teaspoon Italian seasoning
1 bay leaf
1 cup water
1 teaspoon salt
½ teaspoon freshly ground black pepper
¼ cup grated Parmesan cheese
Combine first 12 ingredients in a large pot on the stove. Cover and bring to a boil.
Reduce heat to low, cover, and simmer for 10 minutes. Remove bay leaf, and add salt and pepper. Garnish each serving with Parmesan cheese.
Makes 10 servings.
