Pork and Sauerkraut

  • 1¼ pounds pork tenderloin
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 large onion, sliced
  • 3 medium Granny Smith apples, chopped
  • 1 27-ounce can sauerkraut, rinsed and drained
  • 4 medium white potatoes, or sweet potatoes, peeled and sliced

Season pork; set aside. Place potatoes in crockpot. Combine onion, apple, and sauerkraut and place on top of potatoes. Place pork on top. Cover and cook on low 8 hours or until potatoes are tender.
