1 cup bacon, chopped
2 pounds beef stew meat
3 Tablespoons all-purpose flour
2 medium parsnips, cut into large dice
3 large carrots, cut into large dice
2 cups chopped onion
3 large celery stalks, cut into large dice
1 bag (24 ounces) red bliss potatoes, cut into large dice
1 Tablespoon fresh thyme, chopped
1 can (14.5 ounces) stewed tomatoes
2 Tablespoons tomato paste
1½ teaspoons salt
½ teaspoon freshly ground black pepper
In a large skillet over medium heat, brown bacon; remove to slow cooker, reserving fat in skillet.
Brown stew meat in reserved bacon fat. Sprinkle with flour; remove to crockpot.
