Green Goddess Dressing

  • ¾ cup packed fresh parsley leaves
  • ⅓ cup mayonnaise
  • ⅓ cup plain nonfat Greek yogurt
  • 1 medium green onion, cut up
  • 1 tablespoon white vinegar
  • 1 teaspoon anchovy paste
  • ½ teaspoon dried basil, crushed
  • ¼ teaspoon garlic powder
  • ¼ teaspoon dried tarragon, crushed
  • 1 tablespoon milk

In a blender or food processor, combine all ingredients except milk. Cover and blend or process until smooth. Cover and store in refrigerator up to 2 weeks. Before serving, stir in milk.

Makes about 1 cup (sixteen 1-tablespoon servings.
