Bacon Crackers

  • 30 Club crackers
  • 10 slices uncooked bacon, cut crosswise into thirds (thin-cut works best)
  • ⅓ cup light brown sugar, packed
  • ½ teaspoon black pepper
  • ¼ cup maple syrup

Preheat oven to 350° F. Line a backing sheet with aluminum foil for easy cleanup. Place a wire rack on top.

Lay out the club crackers in a single layer on the rack, making sure they're not overlapping.

Place one piece of bacon on top of each cracker.

Combine brown sugar and pepper in a small bowl. Sprinkle a pinch on top of each bacon piece.

Bake for 15 to 20 minutes, or until the bacon is crispy and the sugar has caramelized, brushing each with maple syrup during the last 5 minutes of cooking time.

Let them cool slightly so that the crackers crisp back up.
