Bacon and Sage Caramelized Onion Crostini

  • 8 slices uncooked bacon, chopped
  • 12 fresh sage leaves
  • 4 large onions, quartered and then thinly sliced
  • ½ recipe of Crostini, prepared (30 pieces)

Cook the bacon in large skillet over medium heat, stirring occasionally, until browned and crispy. Transfer to paper towel lined plate with a slotted spoon, leaving the bacon drippings in the skillet.

Put the sage leaves into the same skillet over medium heat and cook about 1 minute per side. Transfer to the plate with the bacon using a slotted spoon or tongs, leaving the bacon dripping in the skillet.

Put the onions into same skillet over medium heat and cook for 20 to 25 minutes, stirring occasionally, until caramelized and soft. Remove from heat and let cool slightly.

Crumble the cooled sage over the bacon, then thoroughly combine the bacon-sage mixture and the onions in a medium bowl.

Spread the onion mixture evenly over the crostini slices.
