Appetizers


Hummus

 

8 Servings


  • 2 cloves garlic
  • 1 15.5-ounce can chickpeas, drained and rinsed
  • ⅔ cup olive oil
  • ½ cup tahini
  • 6 tablespoons fresh lemon juice
  • ½ teaspoon ground cumin
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Drop garlic through feeding tube of a food processor while the machine is running. Process until well minced. Add remaining ingredients. Process until smooth.

Makes about 2 cups.

 

It's very good as is, but you can add, or garnish with, your choice of ingredients, such as minced garlic, chopped olives, fresh herbs, etc., to create a hummus flavor of your own.

 

Our Current Flavor Variations

 

Olive

 

1 cup mixed Greek olives, pitted

 

Reduce salt from 1 teaspoon to 1 dash. Add ¾ cup of the olives to the food processor with the other indredients, and chop the remaining ¼ cup for garnish.

 

 

Sun-dried Tomato and Basil

 

¼ cup sun-dried tomatoes, chopped

½ cup white wine (not required if tomatoes are packed in liquid)

¼ cup basil leaves

 

Put tomatoes in a bowl and cover with wine; let stand 30 minutes; drain, and discard wine (or save to use in a recipe that will benefit from sun-dried tomato flavored white wine). Put tomatoes, and all but 2 or 3 basil leaves into the food processor with the other ingredients. Chiffonade the remaining leaves for garnish.

 

 

Lemon Dill

 

2 teaspoons lemon zest

1 additional Tablespoon lemon juice

3 Tablespoons chopped fresh dill

 

Add all ingredients to the food processor with the main ingredients, except for 1 teaspoon of dill for garnish.

 

 

Everything Bagel

 

1 Tablespoon sesame seeds, lightly toasted

1 Tablespoon dried minced onion, lightly toasted

2 cloves fresh minced or 1 Tablespoon dried minced garlic, lighty toasted.

1 teaspoon poppy seeds

 

Stir in all ingredients after the basic hummus is prepared. Serve with bagel chips instead of pita chips.
