Slow Cooker Beef Stew

  • 1 cup chopped uncooked bacon
  • 2 pounds beef stew meat
  • 3 tablespoons all-purpose flour
  • 2 parsnips, cut into large dice
  • 3 large carrots, cut into large dice
  • 2 cups chopped onions
  • 3 large stalks celery, cut into large dice
  • 1½ pounds red potatoes, cut into large dice
  • 1 tablespoon fresh thyme, chopped
  • 1 14.5-ounce can stewed tomatoes
  • 2 tablespoons tomato paste
  • 1½ teaspoons salt
  • ½ teaspoon black pepper

In a large skillet over medium heat, brown bacon; remove to slow cooker, reserving fat in skillet.

Brown stew meat in reserved bacon fat. Sprinkle with flour; remove to crockpot.

Stir in remaining ingredients.

Cook on high 4 hours, or low 6 to 8 hours.
