Old Bay Salmon Cakes

 

4 Servings


  • 2 6-ounce cans wild salmon, drained
  • 2 teaspoons Old Bay seasoning
  • 2 large eggs, beaten
  • 2 tablespoons mayonnaise
  • ¾ cup panko bread crumbs
  • 1 small green bell pepper, finely chopped
  • 2 tablespoons chopped fresh chives
  • 2 tablespoons olive oil

In a large bowl, gently combine first 7 ingredients until mixed well. Form into 6 to 8 small patties.

Heat oil in non-stick pan over medium heat. Gently place each patty into hot pan and cook on first side for about 2 to 3 minutes or until golden brown. Carefully flip, and cook for an additional 3 to 4 minutes until second side is browned.

Once cooked, set aside and sprinkle with coarse salt.
